A new proposal for the vinification of the Eptanesian wines from the Technological Educational Institute of Ionian Islands

The results of the studies of the Department of Food Technology that were announced in a seminar held this week at the premises of the Department of Argostoli are very important for the future of the vinification of the Eptanesian wine varieties.

Especially, in the laboratories of the Department yeast is being isolated from the local grape varieties Robola of Cephalonia, Verdea of Zante and Vertzami of Lefkada to prepare doughs that maintain the complete, authentic and "old" fragrances of the three Eptanesian varieties during their vinification, even if this is made with modern, mass methods. The ultimate goal is such "native" yeasts to replace commercial yeasts that are used today.

During the seminar (Academic responsible: Assistant Professor Euphemia Irioti) presented the first successful, in both a small and industrial scale, tests of Robola wine with new yeast from the Cooperative robola and winery Gentilini. At the same time, there were developed in detail the effects of yeast on the aromatic character of the wine and the results of the experimental part of the studies.

Additionally, a comparative tasting between the Robola that was vinified with the new dough and the Robola vinified with the trade dough took place. The audience’s comments –among whom the winemakers of Cephalonia- were positive and in favor of the new method as thus emerge more strongly the individual flavors of the variety.

This is an action of TEI Ionian Islands in order to link scientific research with its applications and the emergence of the special Eptanesian products. The same laboratory procedure applies to Verdea variety of Zante and to Vertzami variety of Lefkada - and it certainly can be applied to any other local grape variety.
